Keto Ham & Cheese Casserole | Keller South Lake Moms

Looking for something cheap, easy and healthy to make for dinner? I don’t know about you but I feel like all this time at home as got me trying new recipes. I have been on (and off) of Keto since July and refuse to let this time at home bring back the hard work and weight that I’ve lost so I’m trying ALL THE KETO RECIPES. I hope you love this recipe as much as I did (and the kiddos too)! Enjoy!

Ingredients:
16 ounces of riced cauliflower (steam bag)
12 ounces of broccoli (steam bag)
2 cups of diced ham
3 cups of shredded cheddar cheese
2 eggs
1 teaspoon salt
1 teaspoon garlic salt
1/2 teaspoon pepper

Instructions:
1.) Preheat oven to 350 degrees
2.) Steam cauliflower rice and broccoli (follow directions on bag)
3.) Add the steamed cauliflower rice and broccoli to a large bowl, add in ham, 2 1/2 cups of shredded cheddar cheese, eggs, and spices. Stir to combine.
4.) Spread mixture into a baking dish and sprinkle the remaining 1/2 cup (or more if your a cheese lover like me) over the top.
5.) Bake uncovered for 30 minutes
6.) Serve and Enjoy 🙂
